Taprooms usually pool all tips and split them by hours worked, because counter service has no table sections to attribute tips to individual staff.
The complication is that taproom staff often aren't only taproom staff. Someone who spends four hours on the line and three behind the bar should share in tips for the three, not the seven — which means the clock has to know the difference.

If your tip-out is a percentage of sales, retail sales inflate the base. Tipping out on tips rather than sales avoids the problem entirely.

How do taprooms split tips with counter service?
By pooling everything and splitting by hours worked. Counter service gives you no way to attribute a tip to an individual, so individual retention is not really an option. The pool is split among whoever was on the clock while those tips were collected, weighted by their time on it.
Should brewery production staff share in taproom tips?
Only for hours they actually worked in the taproom, and only if your wage structure permits it. Federal rules restrict who may be in a mandatory pool based on whether the employer takes a tip credit — most breweries in no-tip-credit states can run a broader pool, but the cleaner approach is to count only taproom hours as tip-earning hours regardless.
Do breweries need a POS to track tips?
No. Tip tracking and payment processing are separate problems. Most taprooms keep whatever POS they already run for card payments and handle tips, hours, and the split alongside it. PaidFair does not process payments at all.
